Khatta Moong | Dahi wale Moong | Protein Rich Healthy Recipe






Ingredients:

  • Moong (whole green gram) – 1 cup
  • Sour curds (khatta dahi) – 1cup
  • Chili powder – 1tsp
  • Turmeric powder (Haldi) – ½ tsp
  • Besan (gram flour) – 1tbsp
  • Oil – 1tbsp
  • Mustard seeds (rai) – 1tsp
  • Curry leaves (kadi patta) – 4-5
  • Asafetida (hing) – ½ tsp
  • Chopped ginger (or ginger paste) – ½ tsp
  • Chopped green chilli or paste – ½ tsp
  • Garam masala – ½ tsp
  • Salt to taste
  • Coriander leaves – for garnishing

Recipe:

  1. Soak the whole moong in water for 2 to 3 hours.
  2. Add 1½ cups of water and pressure cook for 3 whistles.
  3. Let it cool down.
  4. Take 1 cup Sour curd – add chili powder, turmeric powder, besan and some water – mix well.
  5. Heat the oil in a Nonstick pan and add the mustard seeds, curry leaves, asafetida.
  6. Add chopped ginger-green chili (ginger-Green chili paste) and sauté it on a medium flame for a min.
  7. Add the cooked moong, mix well.
  8. Add the curds-besan mixture, 1 cup of water, mix well and simmer for 3 to 4 minutes.
  9. Add Salt according to your taste. Add Garam masala (optional) and mix it. Note: (if curd is not sour enough – use plain curd (dahi) and add some lemon juice for sourness)
  10. Stir occasionally. Add water if needed (simmer for 3 to 4 minutes.)
  11. Garnish with coriander and serve with rice or roti.

Paneer Bhurji | Restaurant style | Dhaba style paneer bhurji

Paneer Bhurji




Ingredients:

  • Paneer- 150 Grams
  • Butter-2-3 Tbsp.
  • Ginger-1½tsp
  • Garlic-1tsp
  • Green chili- 1tsp
  • Onion – 1 medium
  • Tomato- 1 small
  • Coriander leaves- 1tbsp
  • Red chili powder- 2tsp
  • Turmeric- ½tsp
  • Chat masala-1tsp
  • Garam masala- 1tsp
  • Besan (gram flour- Chickpea flour)- 1tsp
  • Kasuri methi- 1tbsp
  • Water-1cup
  • Salt to taste

Recipe:

  • Take 2tbsp butter into a heated pan, once butter melts add chopped garlic, ginger, green chili, and onions. Sauté it for 3-4 mins.
  • Add half chopped tomato and mix well.
  • Add Red chili powder, Turmeric, chat masala powder, Garam masala and kasuri methi. – mix well and cook for few mins till it turns aromatic.( add some water if needed)
  • Add 1tsp roasted besan(gram flour) and mix it, add half cup of water and cook it for 5-7 mins. (NOTE: do not use more than 1tsp besan )
  • Once oil separates – add paneer and mix gently.
  • Add half cup of water and let it cook for 2-3 mins
  • Add 1tbsp butter and salt and mix it. Garnish with coriander leaves.
  • Serve with bread and mint-coriander chutney and some ketchup.

Nacho Cheese | Home made Nacho Dip



Ingredients:

All-purpose Flour- 1tbsp
Butter- 2tbsp
Milk-2 cups
Cheddar Cheese (orange) – 3 slice or ½ cup
White Cheddar Cheese – ½ cup (optional)
Red chili powder- – ½ tsp
Turmeric – A pinch
Salt– ½ tsp
Oregano– ½ tsp
Chili flakes – 1tsp
White pepper powder- – ½tsp
Cilantro/coriander leaves- 1tbsp




Recipe:
1) Add 2tbsp Butter to a heated pan, once butter melts – add 1tbsp All-purpose flour and mix well.
2) Cook it for a min on low flame.
3) Add 2 cups of milk and mix. Once milk started boiling, add salt, red chili, white pepper, and turmeric. Mix it well. To maintain the right consistency add some more milk if needed.
Note: Mixture should not be thick and lumpy.
4) Add Cheddar cheese (Orange) and White cheddar cheese (or only one of them (1cup) – to the milk and mix it until cheese melts.
(Both Orange and white Cheddar have the same basic ingredients and it is only the presence or lack of a coloring agent that will make a difference between these two types of Cheddars)
5) Add Oregano, chili flakes, and cilantro (coriander). – mix it.
6) Serve hot with tortilla chips.
