Aloo Masala Korma

Learn how to make Aloo Masala Korma | हलवाई जैसी आलू की सब्जी | Shaadi Wali Aloo ki Sabzi at home which is widely made in Indian weddings and special occasions. it goes really well with puri, chapatis, & parathas!

 

Ingredients
  • 3 medium boiled Potatoes (aloo)
  • 2 tablespoon oil
  • 2-3 Cloves
  • 1 inch cinnamon
  • 2-3 dried chilies
  • 1-2 cardamom
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • A pinch Asafetida
  • 4-5 curry leaves
  • 2 tsp Ginger-green chili paste
  • 2 small tomatoes
  • 2 teaspoon red chili powder
  • ½ teaspoon turmeric powder
  • 1 teaspoon garam masala powder
  • 1 teaspoon coriander-cumin powder
  • 1 ½ tsp kasuri methi
  • 1 tbsp chopped fresh coriander leaves
  • 1tsp sugar
  • Salt to taste
Recipe
  1. Heat oil in a pan.
  2. Add mustard seeds, cumin seeds, asafetida and curry leaves, Whole garam masalas and ginger garlic paste – mix and sauté for 30 seconds.
  3. Add tomato- and salt, mix and cook for 6-7 mins on medium flame till tomatoes are completely cooked.
  4. Add chilli powder, turmeric powder, coriander – cumin powder, garam masala, kasuri methi and salt – mix well – add some water and cook till oil separates.
  5. Add boiled and chopped potatoes – mix well.
  6. Add 1 cups of water let it cook for 5 -6 mins. Mash few potatoes for consistency.
  7. And chopped coriander and mix well.

Serve hot garnished with a coriander.

Drumstick curry | Gujarati style Saragva ki sabji(kadhi)

Ingredients:
  • Oil – 2tbsp
  • Drumsticks (saragvo) – 3 sticks
  • Yogurt (dahi) – 3 tbsp.
  • Gram flour (besan) – 2tbsp
  • Water – 4-5 cups
  • Turmeric- ½ tsp
  • Asafetida- ½ tsp
  • Dried red chili- 2
  • Red chili powder- 1tsp
  • Coriander cumin powder- 1tsp
  • Garlic chutney- 1tsp
  • Kasuri methi- 1tsp
  • Salt to taste




Recipe:

  1. Cut the drumsticks (saragvo) into 2-3 inch portions.
  2. Remove skin threads (partially) and wash drumsticks properly.
  3. For yogurt-gram flour (dahi-besan) mixture : Take gram flour, yogurt and 2 cups of water and mix it with hand blander.
  4. Heat oil in a pan.
  5. Add mustard seeds, once it starts popping add cumin seeds, dried red chili and Asafetida into the pan.
  6. Add drumsticks and mix all well.
  7. Add all the masalas, garlic chutney and mix all together.
  8. Add 1 cups of water, cover the pan and let it cook for 12-15 mins.
  9. Once drumsticks are cooked – Add gram flour – yogurt mixture and mix well.
  10. Add 1 cup of water and boil the mixture for 5 mins.
  11. Note: add some water if needed (make pouring consistency mixture)
  12. Add kasuri methi and mix well.
  13. Garnish it with coriander leaves
  14. Serve it with some Garlic chutney and Enjoy !

Khatta Moong | Dahi wale Moong | Protein Rich Healthy Recipe






Ingredients:

  • Moong (whole green gram) – 1 cup
  • Sour curds (khatta dahi) – 1cup
  • Chili powder – 1tsp
  • Turmeric powder (Haldi) – ½ tsp
  • Besan (gram flour) – 1tbsp
  • Oil – 1tbsp
  • Mustard seeds (rai) – 1tsp
  • Curry leaves (kadi patta) – 4-5
  • Asafetida (hing) – ½ tsp
  • Chopped ginger (or ginger paste) – ½ tsp
  • Chopped green chilli or paste – ½ tsp
  • Garam masala – ½ tsp
  • Salt to taste
  • Coriander leaves – for garnishing

Recipe:

  1. Soak the whole moong in water for 2 to 3 hours.
  2. Add 1½ cups of water and pressure cook for 3 whistles.
  3. Let it cool down.
  4. Take 1 cup Sour curd – add chili powder, turmeric powder, besan and some water – mix well.
  5. Heat the oil in a Nonstick pan and add the mustard seeds, curry leaves, asafetida.
  6. Add chopped ginger-green chili (ginger-Green chili paste) and sauté it on a medium flame for a min.
  7. Add the cooked moong, mix well.
  8. Add the curds-besan mixture, 1 cup of water, mix well and simmer for 3 to 4 minutes.
  9. Add Salt according to your taste. Add Garam masala (optional) and mix it. Note: (if curd is not sour enough – use plain curd (dahi) and add some lemon juice for sourness)
  10. Stir occasionally. Add water if needed (simmer for 3 to 4 minutes.)
  11. Garnish with coriander and serve with rice or roti.
