Paneer Bhurji




Ingredients:

  • Paneer- 150 Grams
  • Butter-2-3 Tbsp.
  • Ginger-1½tsp
  • Garlic-1tsp
  • Green chili- 1tsp
  • Onion – 1 medium
  • Tomato- 1 small
  • Coriander leaves- 1tbsp
  • Red chili powder- 2tsp
  • Turmeric- ½tsp
  • Chat masala-1tsp
  • Garam masala- 1tsp
  • Besan (gram flour- Chickpea flour)- 1tsp
  • Kasuri methi- 1tbsp
  • Water-1cup
  • Salt to taste

Recipe:

  • Take 2tbsp butter into a heated pan, once butter melts add chopped garlic, ginger, green chili, and onions. Sauté it for 3-4 mins.
  • Add half chopped tomato and mix well.
  • Add Red chili powder, Turmeric, chat masala powder, Garam masala and kasuri methi. – mix well and cook for few mins till it turns aromatic.( add some water if needed)
  • Add 1tsp roasted besan(gram flour) and mix it, add half cup of water and cook it for 5-7 mins. (NOTE: do not use more than 1tsp besan )
  • Once oil separates – add paneer and mix gently.
  • Add half cup of water and let it cook for 2-3 mins
  • Add 1tbsp butter and salt and mix it. Garnish with coriander leaves.
  • Serve with bread and mint-coriander chutney and some ketchup.

Gujarati Khatti Mithi Dal





Ingredients:

  • Toor dal (Yellow Pigeon Pea)-1cup
  • Turmeric powder (haldi)-½tsp
  • Salt-1tsp
  • Jaggery (gud)-1tbsp
  • Dates (khajur)-2
  • Cashew nuts (kaju)-1tsp(optional)
  • Peanuts-1Tsp
  • Tamarind paste (Imali)- 1tsp
  • Red chili Powder- 2tsp
  • Tomato- 1small
  • Green Chilly-2
  • Ginger-2-3 slice
  • Clove-3
  • Cinnamon-½inch
  • Dried Red chili-1
  • Curry leaves-4
  • Kasuri Methi (dried fenugreek leaves) -1tsp
  • Methi seeds (Fenugreek seeds) – ½tsp
  • Mustard seeds (Rai)-1tsp
  • Asafetida (Hing) – ½tsp
  • Oil-1tbsp
  • Water-2-3 cups




Recipe:

  1. To Boil Toor Daal: Take toor dal and 2 cups of water in a pressure cooker, and pressure cook for 4 whistles.
  2. Transfer Boiled Dal into a bowl – add 1 cup of water and whisk until it becomes lump free and smooth or use hand blender to blend the dal.
  3. Heat a pan and transfer the dal mixture, add salt, methi seeds and haldi, and ½cup water -mix well and let it boil for 10 mins on low flame.
  4. Add jaggery, Tamarind Paste, Cashew, peanuts, Green chili, Ginger, dates – mix well and cook for 5-7 mins,
  5. To prepare Tadka- Take some oil and heat on medium flame – Then Add Mustard seeds, when mustard seeds starts popping  add cloves, cinnamon, dried red chili, Kasuri methi, Hing(asafetida), and red chili powder. Turn off the flame after few seconds.
  6. Add the tadka into the dal and mix well. Then add chopped tomato, add some water and let it boil for 10 mins.
  7. Garnish with coriander leaves and serve hot with roti, sabji and rice.

Paneer Lababdar




INGREDIENTS
  • Oil 2 tbsp
  • Butter 2 tbsp whole Garam Masala:
  • (Cumin seeds 1 tsp, Cinnamon 1/2 Inch, Clove 2, Peppercorn 3, Cardamom 2-3, Bay leaf 1)
  • Ginger 1 tsp
  • Garlic 2 tsp
  • Green Chilly 1
  • Onions 2 Small
  • Tomato 2 Medium
  • Red Chilly Powder 1 tsp
  • Coriander Cumin Power 1.5 tsp
  • Turmeric 1/2 tsp
  • Kitchen King Masala 1.5 tsp
  • Garam Masala 1 tsp
  • Salt 1 tsp
  • Sugar 1 tsp
  • Kasuri Methi 1 tbsp
  • Cashew Nuts 2 tbsp
  • Paneer 150 grms (10 – 12 Cubes)
  • Coriander Leaves – for garnishing Process
recipe:
  1. Heat 1 tbsp oil into a pan and Add 1 tbsp butter in to it.
  2. Add All whole Garam masala’s and saute it for 1 min.
  3. Add chopped Ginger, Garlic and Green chilly and cook it for 2 mins. 4)Add chopped onion and cook well for 5-7 mins.
  4. Add chopped Tomato and saute it for 5 more mins.
  5. Add Turmeric, Coriander -cumin powder, red chilly powder, kitchen king masala into the mixture. Add some water and cook it for 5 mins.
  6. Add 2 tbsp cashew nuts and mix it well. saute the mixture for few mins And Let it cool Down completely.
  7. Grind it into a smooth paste.
  8. Put 1 tbsp oil into a pan, after oil warms up, saute the paneer cubes for 2-3 mins.(until paneer turns golden brown)
  9. In remaining oil add 1 tbsp butter.
  10. Add smooth paste and mix it well. (cook for 5 min)
  11. Add sugar, Garam masala, And salt according to your taste.
  12. Add water and cook until oil separates(cook for 5-7 mins).
  13. Add fried paneer cubes to the smooth Gravy.
  14. Garnish it with fresh coriander leaves and enjoy.
