Crispy Besan Dosa | Besan Chila | Pudla

  • Besan(gram flour)- 1 cup
  • Red chili Powder – 1 tsp
  • Turmeric – ½ tsp
  • Coriander- cumin powder- ½ tsp
  • Garam masala- ½ tsp
  • Kasuri methi (Dried fenugreek leaves)- 1tsp
  • Garlic chutney – 1tsp
  • Salt- as per taste
  • Oil- 1 tbsp.
  • Water- Approx 1 cup

  1. In a bowl, add Besan and all the masalas, salt and garlic chutney – mix well.
  2. Keep Adding water gradually, mix and make lump free, thin and pouring consistency batter.
  3. Heat a non-stick pan on medium flame, Grease the pan with some oil.
  4. Once the pan is hot, pour 2-3 Tbsp batter and spread evenly to make a round shape thin dosa (chilla).
  5. Let it cook for 3-4 mins on medium flame.
  6. Smear a little oil over it and along the edges and cook on a high flame till the dosa turns brown in color and crisp.
  7. Fold over to make a semi-circle
  8. Repeat with the remaining batter.
  9. Serve immediately with tamarind chutney, coconut chutney or tomato ketchup.

Schezwan Chilli Makahna | Makhana Chinese Bhel | Lotus Seeds in Chinese Sauce

  • Makhana(Lotus seed) – 2cups
  • Ghee – 1tbsp
  • Turmeric- ½  tsp
  • Oil- ½ tbsp.
  • Soy sauce- ½ tbsp.
  • Schezwan Sauce – 1tsp
  • Tomato ketchup- 1tsp
  • Chopped onion – 1 small
  • Chopped Bell pepper- 1tbsp
  • Chopped Spring onion(green onion)- 1tbsp
  • Chopped tomato- 1 small
  • Chat masala- a pinch


  1. Heat a pan on medium flame.
  2. Add ghee (clarified butter) , once ghee is hot add makhana and mix.
  3. Add salt and turmeric.
  4. Mix and roast makhana for 10-12 mins on medium-high flame.
  5. Roast makhana until it becomes crisp and crunchy, once it turns golden brown turn off the gas. transfer the makhanas into a bowl.
  6. Heat some oil, once oil is hot add all vegetables and sauté for a min.
  7. Add salt, soy sauce, schezwan sauce, tomato ketchup and sugar. Mix all together.
  8. Cook for few mins until all the water evaporates.
  9. Add roasted makhana and mix quickly. Sprinkle chat masala.
  10. Serve immediately.

Note: for Better taste and crunchy texture:  Mix makhana and schezwan gravy just before serving.

Sweet Corn Butter Masala | Chatpata Sweet Corn Masala

  • Sweetcorn- 2cups
  • Melted butter- 1tbsp
  • Lemon juice – ½ tbsp.
  • Red chili powder- ½ tsp
  • Red chili flakes- ½  tsp
  • Chat masala powder- ½ tsp
  • Roasted cumin powder- ½ tsp
  • Black pepper powder- A pinch
  • Coriander leaves- 1tbsp
  • Salt to taste
  • Water 4-5 cups for boiling


  1. Take 4-5 cups of water, once the water starts boiling – add sweet corns into the pan.
  2. Let it cook for 7-8 mins on medium-high flame.
  3. Drain all the water and transfer the boiled sweetcorn into a bowl.
  4. Add melted butter, red chili powder, salt, chat masala, chili flakes, roasted cumin powder, black pepper powder, coriander leaves and lemon juice.
  5. Mix all well.
  6. For garnishing – sprinkle some red chili powder and coriander leaves.
  7. Serve hot
