Lauki Thepla | Dudhi Thepla | गुजराती थेपला

Ingredients:
  • whole wheat flour (gehun ka atta) –  2 cups
  • Shredded Lauki (Dhudhi- Bottle Gourd) – 1/2 cup
  • oil – 1 tbsp
  • curd (dahi) – 1tbsp
  • Garlic Paste – ½ tsp
  • Ginger – green chilli paste – ½ tsp
  • Kasuri Methi – 1tsp
  • Sugar- 1tsp
  • Lemon Juice – ½ tbsp
  • Turmeric powder (haldi) – ½ tsp
  • Chilli powder – 1 tsp
  • Coriander-cumin powder – ½ tsp
  • Salt to taste




Recipe:

  1. Combine all the ingredients in a bowl.
  2. knead a semi-soft dough. (Note: very little amount of Water is required)
  3. Grease the dough using a little oil.
  4. Cover and keep aside for 15 minutes.
  5. Divide the dough into 14-15 equal portions
  6. Sprinkle some wheat flour on flat surface, take one dough ball –roll it and make it flat. Roll each portion into a round shape.
  7. Place it on heated pan, flip it after some time and roast, Apply little oil on both sides and cook until it gets golden.

Carrot Zucchini Pancake | carrot-zucchini chilla | Healthy Savory Pancake




Ingredients
  • Wheat flour- 2 tbsp
  • Besan- 2 tbsp
  • Grated zucchini and carrot- 1 cup
  • Finely chopped green chillies- 1/2 tsp
  • Ginger paste- 1/2 tsp
  • Finely chopped coriander (cilantro) – 1 tsp
  • Salt- as per taste
  • Oil- 1/2 tsp
  • Water- 1/2 cup

Recipe:

  1. In a bowl, add wheat flour, besan, zucchini, carrot, green chillies, Ginger paste, coriander leaves, salt and water to make the batter of pouring consistency.  (Note: instead of Zucchini , You can also use Lauki (BOTTLE GOURD ) or Turai)
  2. Heat 1/2 tsp oil in a non-stick pan, pour 2 Tbsp batter into the pan and spread evenly to make a round shape pancake.
  3. Once it turns golden brown flip it and let it cook for 3-4 mins.
  4. Flip occasionally and cook both sides evenly.
  5. Serve hot with curd or mint chutney.

Khatta Moong | Dahi wale Moong | Protein Rich Healthy Recipe






Ingredients:

  • Moong (whole green gram) – 1 cup
  • Sour curds (khatta dahi) – 1cup
  • Chili powder – 1tsp
  • Turmeric powder (Haldi) – ½ tsp
  • Besan (gram flour) – 1tbsp
  • Oil – 1tbsp
  • Mustard seeds (rai) – 1tsp
  • Curry leaves (kadi patta) – 4-5
  • Asafetida (hing) – ½ tsp
  • Chopped ginger (or ginger paste) – ½ tsp
  • Chopped green chilli or paste – ½ tsp
  • Garam masala – ½ tsp
  • Salt to taste
  • Coriander leaves – for garnishing

Recipe:

  1. Soak the whole moong in water for 2 to 3 hours.
  2. Add 1½ cups of water and pressure cook for 3 whistles.
  3. Let it cool down.
  4. Take 1 cup Sour curd – add chili powder, turmeric powder, besan and some water – mix well.
  5. Heat the oil in a Nonstick pan and add the mustard seeds, curry leaves, asafetida.
  6. Add chopped ginger-green chili (ginger-Green chili paste) and sauté it on a medium flame for a min.
  7. Add the cooked moong, mix well.
  8. Add the curds-besan mixture, 1 cup of water, mix well and simmer for 3 to 4 minutes.
  9. Add Salt according to your taste. Add Garam masala (optional) and mix it. Note: (if curd is not sour enough – use plain curd (dahi) and add some lemon juice for sourness)
  10. Stir occasionally. Add water if needed (simmer for 3 to 4 minutes.)
  11. Garnish with coriander and serve with rice or roti.
